Summertime Berry Pancakes

blueberry pancakes SMIn the mood for a delicious and healthy summertime breakfast?  Try our delicious Summertime Berry Pancakes.  It's quick and easy and packed with berry power!












1 ¼ cups whole wheat flour

2 teaspoons baking power

1 egg

1 cup low-fat milk

½ teaspoon salt

1 tablespoon honey

½ cup blueberries

¼ raspberries


For blueberry syrup:

1 cup water

1 cup blueberries

½ cup honey



Sift together flour and baking powder, then set aside. In a large bowl, Beat egg, milk, salt and honey. Slowly stir in flour mix, keeping mixture moist. Add in blueberries and raspberries, and continue to stir.


Preheat skillet over medium heat, and spray bottom with cooking spray. For each pancake, pour in approximately 1/4 cup of batter into the pan. Cook until bubbly, about 1 ½ minutes. Turn, and continue cooking until golden brown.

For blueberry syrup:

Add 1 cup of water to small pot along with blueberries, raspberries and honey. Bring to a boil then allow to cool. Serve over pancakes.
