onionsauceWell spring has finally sprung!!  Gone is the ice and snow, March madness was mad with dual championships for the UConn Huskies (YES !!!) and  the flowers are beginning to pop out of the ground. The tarps are off the baseball diamonds, and the unmistakable aromas of backyard grills topped with steaks, chicken , burgers and hot dogs fill the air.  When I think about grilling, there is one item that I cannot be without: Street Cart Style Onion Sauce!  This incredibly aromatic, sweet heat topping just plain goes with anything.  It's the only condiment you will need: try it on thin sliced flank or London broil, chicken, burgers, and of course, the hot dog.  Here is what you will need, and how to prepare this wonderful topping.  Trust me, you won't be disappointed!

Push Cart Onion Topping (Sauce)

2 tbsp vegetable oil

2 medium sized onions cut into 1/4 inch dice

1/4 cup of ketchup

1 pinch of cinnamon

1/8 tsp chili powder

2 dash of hot sauce

1 dash of kosher salt

1 cup of water

1.  In a medium sized pan, heat the oil over med heat, add the onions and saute until golden and soft, about 7 minutes.

2.  Mix in the ketchup, then add the cinnamon, chili powder, hot sauce and salt.

3. Pour in the water and stir.

4.  Bring the mixture to a boil, then reduce heat and simmer uncovered for about 10 minutes or until the mixture is heated through.

Top and enjoy!
